Being in a freezer meal club is awesome! The hardest part is coming up with a new, tasty, heathy recipe every month. Here are two recipes we chose to spotlight because they are ALL STARS in our club and they are SO easy to assemble!!!
Jenn’s Amazing Mango Salsa Tilapia

This recipe is awesome! We have asked Jenn to make it a few times because it tastes good and is pretty healthy.
Gingered Tilapia with Mango Salsa
Marinade:

3 T honey
3 T soy sauce
3 T balsamic vinegar
1 tsp ground ginger
1 clove garlic
Mango Salsa:
Diced mango
Diced red pepper
Diced green chiles
Diced green onion
Salt/pepper to taste
Dash lime juice
To prepare:
Place tilapia fillets in bag & cover with marinade.  Place mango salsa in a separate bag.  Label & freeze.
To serve:  
Allow to thaw overnight so fish takes on flavor of marinade.  Pour fish and marinade into a pan drizzled with olive oil.  Cook on stovetop until flaky – about 5 minutes per side.  Remove fish from pan & reduce marinade until bubbly & slightly thickened.  Top fish with marinade & mango salsa.

Serve over a bed of rice.

Corrin’s It Doesn’t Get Easier Pork Spare Ribs
Ingredients
3 lbs pork spare ribs
2 containers BBQ sauce
2 gallon zip lock bags
1 diced onion
Salt/ pepper
Combine all ingredients and half in 2 gallon ziploc bags.
When cooking- defrost in the fridge in the morning (if you remember). You can cook the ribs in the slow cooker on low for about 6 hrs, bake it, or grill them.
Serve them with corn and mashed potatoes.
