Linda’s Famous Italian Creme Cake

10356691_10205135493095525_1682820073957210335_nToday is my mom’s birthday so I wanted to write a post about her because she is a great mom.

Anyone who knows my mother Linda knows two things about her:

  1. She is Italian
  2. She loves to cook

If you know her than you know that on special occasions, she will make her delicious Italian Cream Cake.  My dad is famous for getting up in the middle of the night and sneaking a piece that is meant for a special occasions.  My mom has learned now to make two cakes if she really needs my dad to stay out of the cake for a special occasion.

For Brad’s 41st  birthday, I decided to make my mom’s Italian Cream cake for him.  He loved it and it brought back great memories of my mom making it for us.

The thing that I like about the recipe is that it is VERY easy to make.  It really is best when you have three round pans and you put the frosting in between the layers.

Linda’s Famous Italian Cream Cake

Ingredients:

1 cup buttermilk

1 tsp baking soda

½ cup butter

½ cup shortening

2 cups white sugar

5 eggs

1 teaspoon vanilla extract

1 cup coconut

1 tsp baking powder

2 cups all purpose flour

1 cup chopped pecans

 

Frosting

1 package cream cheese

1 lb confectioners sugar

¼ cup of butter

1 tsp vanilla

1 cup chopped pecans

1 cup coconut

Directions:

Mix the ingredients and pour into three cake pans.  Bake on 350 degrees for about 30 minutes (check on them).

Mix the frosting and spread on the cake.  Make sure you spread the frosting in between the layers.
