Today is the first day of school for our kids!!! We have enjoyed the summer, but everyone (including the kids) are ready to go back to school and get into a routine. Sophia starts Kindergarten, Isabella enters second grade, and Finley starts three day a week MDO next week. Christa’s 5 kids start 12th, 9th, 8th, 7th, and MDO.
Today’s blog post was inspired by the fact that we just got back from a week long cruise where we ate and drank way too much! We are hitting the diets hard and the kids need healthy snacks. Since I was diagnosed with hypoglycemia, I have to eat every 2-3 hours a healthy snack or small meal. Coming up with so many snacks has been a challenge, but I finally spent a few hours prepping and feel excited about what I made.
While I was shopping at HEB the girls and I noticed the cute little snack packs that included fruit, veggies, cheese, and dips. The problem was that they ran $2.00-$3.00!!! I decided that I was going to make my own snack bags for the all family members.
Veggies (red bell peppers, cucumbers, cherry tomatoes, celery, mini carrots)
Fruit (grapes, apples, bananas)

I cut up the fruit and vegetables and then set up an assembly line. I wanted my snack packs to be around 100 calories each. I used my Weight Watchers Scale to weigh the food for calorie counting. I love that I was able to be creative. Some bags have cheese and fruit, others have veggies, pretzels, etc. I love variety and am excited that I have so many options. I ended up making 20 snack bags, but have enough supplies to make more!
What is my all time favorite go to snack????Red bell pepper and hummus!!! My sister-in-law Ashlee introduced this to me a few years ago and it is so good! Plus my kids love this snack. It is a win-win.
