If you asked me what food I associate with Thanksgiving, I would say my mom’s sweet potato casserole. She makes it every Thanksgiving and it tastes as good (or even better) than the desserts.I asked my mom to send me the recipe and she sent me her old school written copy. That shows you how long she has been using the recipe. I’m impressed she is organized to still have the original card! My mom usually triples the recipe.
1 (2lbs 14 oz) can sweet potatoes
1/4 cup margarine
1/2 cup sugar
1/3 cup evaporated milk
1 teaspoon vanilla
1/3 cup margarine
1/4 cup brown sugar
1/2 cup flour
1 cup chopped nuts (I believe she always uses pecans)In saucepan heat potatoes. Remove and cream well. Mix in rest of casserole ingredients. Pour into a casserole dish.
Next, make the topping. Melt butter and add the remaining topping ingredients. Pour on top of the casserole mixture.
Bake at 350 degrees for 35 minutes.
