IMG_3162The poor taco.  It’s one of those meals that you forget about because it is often trumped by steak, salmon, or other “fancy foods”.  Last Thursday it was the middle of the day and I was thinking about how much I missed my husband and missed us hanging out with the kids.  It was one of those weeks where he was getting home every night at 7 or 7:30 and we all were cranky.  I called him in the middle of the day and asked if he could try and get home around 6 or 6:30 so that we could have a family night.IMG_3175I decided that I would make a fun, pretty healthy meal and we would play a game afterwards.  The problem was that I did not feel like going to the grocery store.  Plus, one of our New Years resolutions was to waste less food and eat what we have in the fridge, freezer, and pantry. I remembered that in the freezer I had flour tortillas and ground turkey (we are trying to cut back on our red meat consumption).  IMG_3171-2I started to get excited about the challenge of seeing if I could make an AMAZING, FUN TACO BAR using only ingredients we had at home.  Imagine my surprise when I started pulling things out and saw that we had everything we needed and more!  I found a taco seasoning mix, can of black beans, chips, and a packet of Spanish Rice in the pantry.  I found spinach, tomatoes, onion, cheese, light sour cream, and red and green bell pepper in the refrigerator. Who knew this would be so easy and that I could surprise the girls with such a fun meal on a random weeknight!IMG_3169The girls were tickled when they saw what I threw together and Dave was even impressed. Everyone got to make their own tacos and then we sat down for a fun game of family Trivia Pursuit. IMG_3163Here are the reasons why I feel the taco deserves more respect:

  • They taste really good!
  • They are SOOO easy to make.
  • You can’t tell a difference between ground turkey and ground beef when you use taco seasoning. 
  • Most of the ingredients are not perishable, so they are easy to freeze or have in your pantry (meat, tortillas, beans, rice, cheese, seasoning).
  • They are fun to assemble.
  • They are an inexpensive food to feed to a large crowd. 
  • You can make them healthy.

**** This meal occurred during a period of time when I was out of freezer meals from my freezer meal club.  It made me realize that I LOVE freezer meals, but sometimes it is fun to mix things up and cook a nice meal for your family.
